1⁄4 kg eggplant strips
1⁄4 kg string beans
1⁄4 kg kangkong or watercress
400 ml coconut milk
2 tablespoon (40ml) curry powder
Add salt according to taste
Cut eggplant, string beans and kangkong. Boil two glasses of water in a pot and add the eggplant and string beans. Once they are half-cooked, add the kangkong last. The water should just cover the vegetables.
Add salt, & curry powder. Turn off the stove and gradually add coconut milk.
You can change the vegetables according to your taste.
